Cheesecake is a beloved dessert around the world, known for its rich, creamy texture and crumbly biscuit base. Here's a classic cheesecake recipe that you can try at home:


Ingredients


 For the Crust

- 1 1/2 cups graham cracker crumbs (or digestive biscuits, crushed)

- 2 tablespoons sugar

- 1/3 cup unsalted butter, melted


For the Filling

- 4 packages (8 ounces each) cream cheese, softened

- 1 cup sugar

- 1 teaspoon vanilla extract

- 4 large eggs

- 2/3 cup sour cream

- 2/3 cup heavy cream


 For the Topping (optional)

- Fresh strawberries, blueberries, or raspberries

- Whipped cream

- Fruit compote or sauce


Instructions


1. Preheat the Oven: Preheat your oven to 325°F (160°C).


2. Prepare the Crust: Mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then cool.


3. Make the Filling: In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, beating just until blended after each addition. Mix in the sour cream and heavy cream.


4. Bake: Pour the filling over the crust in the pan. Smooth the top with a spatula. Bake for about 55 minutes, or until the center is almost set but still slightly jiggly. Avoid opening the oven door too often.


5. Cool: Turn off the oven and leave the door slightly open to let the cheesecake cool slowly. This helps prevent cracking.


6. Refrigerate: Once cooled, remove the cheesecake from the oven and refrigerate it for at least 4 hours, preferably overnight.


7. Serve: Before serving, top the cheesecake with your choice of berries, whipped cream, or a fruit compote. Use a hot knife (dipped in hot water and then dried) for clean slices.
